crockpot chorizo and chicken

The crockpot. Â Also known as the slow cooker. Â A beautiful countertop cooking appliance that allows you to throw miscellaneous foods inside in the morning, let them simmer all day long, and have a mouth watering meal by dinner time. Â This magical machine does all the work for you… college kids love finding machines that do the work for them.
My first experiment with the crockpot turned out to be a major success. Â I’ve actually made it twice this week… Get this: Juicy fall-off-the-bone chicken, smoky chorizo sausage, tender sweet potatoes, and sweet garlicky tomatoes all melded into the most scrumptious of hearty stews. Â This magic can be all yours with a crockpot… and those ingredients I mentioned up there…
1 yellow onion, chopped
2 sweet potatoes, peeled and chopped
1 pack bone in chicken thighs
1 pack chicken drumsticks
2 large chorizo sausages, crumbled
2 cans petite diced tomatoes
salt, pepper, and dried basil
Throw chopped onions, sweet potatoes, chorizo, and chicken in your crockpot. Â Season with some chopped garlic, salt, pepper, and dried basil. Â Pour tomatoes overtop and cook on low for 6 hours. Â You could also cook it for 4 hours on high if you are tight on time.
I ate my stew with some crispy asparagus, but I’ve had it with kale, broccoli, insert delicious green veggie here.

I actually used already cooked chorizo because that is what I had on hand, but I think fresh chorizo would only add to the dish!
